Harvesting in Banko Taratu is and always has been a strongly traditional practice whereby farmers, family and community come together. The village of Banko Taratu is located in the Gedeb region, with plenty of seasonal, annual rainfall and a production at the highest elevations, between 1900 and 2300 masl. The processing facilities source cherries from more than 500 smallholder farmers in and around Banko Taratu, and afterwards collect them at EDN Gedeb where they are processed with high standards of quality and consistency. Farmers who contributed receive premium pricing and have access to ethical and sustainable production techniques. Processing goes as follows: ripe cherries are hand-picked and sorted before depulping. The beans undergo a temperature- and environmentally controlled fermentation in tanks for 18 to 72 hours to enhance the sweetness and complexity of the cup. Beans are thereupon washed thoroughly until all the remaining mucilage is removed and then fermented once more, this time as parchment in clean tanks with fresh water for 6 to 24 hours. This process has proven to refine and improve clarity. Once over, the coffee is washed and slow-dried until the optimal and desired moisture content is reached. All coffee is then moved to the EDN warehouse in Addis Ababa for milling, final sorting and storage before export. Located in Nyeri, mountainous Central Kenya, where coffee plants thrive on the red, volcanic fertile soil. Ichuga station lies at 1700 masl and cherries are delivered by farmers who work exclusively with the Kiama Farmer Cooperative Society that runs it. Farmers selectively pick ripe cherries and deliver them to the station where they’re carefully sorted before further processing. The coffee is first depulped, fermented and washed with clean water to remove any remaining mucilage. Parchment is then spread out on raised beds and covered during the hottest time of the day and overnight to prevent drying damage. Drying takes approximately two weeks, depending on the weather circumstances. Through Rodriguez’, the leader, and other’s efforts and innovations they collectively lifted the community’s production and processing to a higher level. The cooperative shares various premises, such as a cupping lab, drying stations and a central warehouse, allowing every producer to bring out the best in each lot whilst maintaining full traceability and thus personal and collective recognition. This lot, consisting of Castillo and Colombia, was grown at 2000 masl, on Finca Betania and cherries were carefully hand-picked. The finest cherries were then floated in cold water and thereupon fermented anaerobically in sealed tanks for 48 hours. Finally the cherries were laid out to dry on raised beds in the sun for about 20 to 28 days and rested in GrainPro bags for another 15 days to stabilize before milling. We first discovered Linarco’s coffee last year and fell for his clean, consistent cup profiles. This natural anaerobic lot was produced and processed in the Buku Sayisa village in Hambela, Guji. Buku Sayisa lies between 2000 and 2300 masl and harvest season runs from October through December. Since always, the season brings the whole village to the farms, which are only small patches of land, making coffee cultivation in this region a community tradition and a primary income. Cherries, exclusively 74114, are hand-picked with utmost attention to ripeness and brought to the EDN processing site in the area. Here, the cherries are placed inside sealed tanks and fermented for 5 to 10 days depending on the desired profile. They are then dried on raised beds in the sun on-site and later brought to the dry mill in Addis Ababa where it is packed and awaits export.
